I love participating in open houses, almost as I love getting creative in the kitchen! So when I was asked to bring something to the open house I knew just what I was going to do. Living on the beach is always amazing, I love to sit outside and hear the waves. It is always so calming. When I found out the location of the open house I was excited to bring some fun in the sun cookies to this event!
Nutter Butter Cookies
They are easy to make and yummy and oh so cute!
Take a Nutter Butter cookie and M&M’s and white decorative icing. Make a loop on the cookies and add the M&M and presto. I let it sit out a couple hours before bagging them up.
They got so many compliments and were so easy to make! Enjoy!!
With the holiday season upon us, many are starting to plan for their Christmas parties and many more, their New Year’s parties. Its standard to bring something, either food or drink, to such gatherings but after spending all one’s money on Christmas you may be looking to go thrifty when it comes to such events. One of my favorite drink recipes from my college years was Blue Hawaiians. And the best part is you can make as little or as much as you want on a budget. Where most recipes call for specific liquors and mixes, the only constant in the Blue Hawaiian is the base ingredients: Coconut Rum, Vodka, Pineapple juice and Blue Curacao.
How fancy and upbeat you want them to taste is up to you after that. When I hosted these types of parties I would take a sports water cooler and make a vat of Blue Hawaiian which would service about 15 people comfortably. Now forewarning: this alcohol content in these is extremely potent so be sure to warn people. Being on a college budget there’s no way I could afford the cream of the crop in ingredients so I would settle for the plastic bottle montage. My go to on a budget Coconut Rum was Admiral Nelson. It by far is one of my favorite budget liquors which mixes the best. Next, I would go with the vodka, usually White Wolf Vodka. Blue Curacao is easy enough and if you have a half a bottle lying around you won’t even need to buy any because that is plenty. Next, you’ll need the Pineapple juice. This is the one area where I don’t go cheaper. I really only buy Dole’s larger canned pineapple juice. The imitation brands just don’t have the flavor that Doles does. Finally, you get to mixing. Now the biggest reason why this mixed drink is so easy to make in the masses is that it requires little to no measuring. It’s 2 1.75L bottles of Coconut Rum, 1 bottle of 1.75L of Vodka, 2-3 cans of pineapple juice, and 4-second pour of blue curacao, all over the ice. Stir and taste. If it’s too sweet, add more vodka, if it’s too strong, add more pineapples juice, if it’s not sweet enough add more coconut rum. Done. Even if you’re not hosting the party you can make this and bring it as a trash can punch and everyone can enjoy. Plus, you’ll be the person who brought the party. If you’re going to a more controlled party and want to bring the higher brands, I would recommend Malibu Coconut rum and Svedka vodka and for the pineapple juice, look for the smaller individual cans. Blue Curacao really doesn’t change but if you want to buy a higher name brand you can. The portions change just slightly: 3 oz of coconut rum, 2 oz of vodka, 1 can of pineapple juice, and a splash of blue curacao. Stir and enjoy. Happy Holidays and drink responsibly.
Thanksgiving is coming up!! Do not forget the pecan pie everyone loves!! Below is an amazing recipe that everyone will love!
- 1 cup sugar
- 1 1⁄2 cups corn syrup (it could be any type of corn syrup)
- 4 eggs
- 1⁄4 cup butter
- 1 1⁄2 teaspoons vanilla extract
- 1 1⁄2 cups pecans
- 1 unbaked deep-dish pie shell
- Heat oven to 350
- In a saucepan boil sugar and corn syrup together for 2 to 3 minutes then set aside to cool off slightly.
- While that is cooling off I like to chop up the pecans in a shredder.
- In large bowl you will want to beat eggs lightly then very slowly pour the syrup mixture into the eggs, stirring continually.
- At this point I like to strain the mixture to make sure it’s smooth and lump free.
- Stir in the butter, the vanilla, and the shredded pecans then pour into crust.
- Bake in a 350°F oven for about 45 to 60 minutes or until set.

Chicken Fried Rice Recipe
2 tablespoons sesame oil
2 tablespoons vegetable oil
1-pound boneless skinless chicken breasts,
1 1/2 cups frozen peas and diced carrots blend
3 green onions
2 to 3 garlic cloves
3 large eggs, lightly beaten
4 cups cooked rice
3 to 4 tablespoons Tamari Lite Soy Sauce
A pinch of salt and pepper
· To a large non-stick skillet or wok, add the sesame and vegetable oils, sliced chicken breast. Then you will want to cook over medium-high heat for about 3 – 5 minutes or until all the pink is gone while flipping occasionally so all sides can cook evenly. The cooking time might be different based on the size of the type of the chicken being cooked with. After the chicken is finished you will want to move it out of the skillet onto a plate, however, be sure to keep the juices in the skillet
Add the peas, carrots, green onions, then cook for about 2 – 3 minutes, or until the veggies are soft.
Then will you will want to add the garlic cook for about 1 -2 minutes while stirring frequently.
After stirring the garlic in you will want to push the veggies to one side of the skillet so you can scramble eggs on the other side. You will want to scramble the 3 large eggs. After scrambled mix the eggs with the veggies.
Combine the chicken, rice, into the veggies and eggs. At this point, you should evenly drizzle Tamari Lite sauce, salt, and pepper. Then you should cook everything for about 2-3 minutes so the chicken, vegetable, eggs.

Three Bean Wild Rice Salad
This Three Bean Wild Rice Salad is perfect for an occasion. If the occasion is a pot luck at church, a new dinner idea or even a lunch this would be perfect. It is healthy which makes it that much better to eat and enjoyable to eat. This side dish takes about 10 minutes to make causing it to be the perfect side for any meal. Here is a list of all the ingredients, what you will need to make this.
1 15 oz can of Black beans
1/2 cup of Cilantro
1 15 oz can of Garbanzo beans
1 15 oz can of Kidney beans
1/2 Red of onion
2 cups of Wild rice blend, cooked
1/2 tsp of Black pepper, fresh ground
1/2 tsp of Salt
4 tbsp of Sugar
2 tbsp of Olive oil, extra virgin
3 tbsp of Red wine vinegar
In a large mixing bowl mix together the wild rice, kidney beans, garbanzo beans, black beans, red onion, jalapeno, cilantro.
In a smaller mixing bowl combine the red wine vinegar, olive oil, salt, black pepper, and sugar. Once everything in the smaller bowl is mixed together pour this over the rice salad. If times allows refrigerate for 1 hour to allow the flavors to blend together. Please let me know if you have tried this recipe and how it tasted!
